3/4 lb gemelli pasta, 2 tbsp butter 2 bunches of spring onions salt and pepper 1 lb peeled and deveined shrimp 3/4 c heavy cream 12 cups baby spinach zest of 1 lemon, finely grated cook pasta, drain, ret. to pot In a large skillet, melt butter, add spring onions, 1/2 tsp salt, 1/4 tsp pepper, cook until softened add shrimp and lemon zest, toss till shrimp is opaque, 5 minutes. Add cream to pasta, cook over med. heat until thick, add shrimp mixture and spinach to pasta. Toss. Serve.
