Ingredients
Before we get into the directions, letโs gather up all the ingredients youโll need to make these adorable carrot cake truffles.
- Prepared Carrot Cake: I used a box carrot cake mix (follow the package direction), but homemade works great too!
- Cream Cheese Frosting: Adds that irresistible tang and creamy texture, binding our cake crumbs with sweetness and love. I highly recommend my go-to cream cheese frosting recipe.
- Pure White Candy Melts: The secret to that smooth, snappy coating that makes these truffles look as good as they taste.
- White Chocolate Baking Bar: Elevates the richness of our truffles, adding a depth of flavor that white candy melts alone canโt achieve.
- Vegetable Shortening (Crisco): A little trick to ensure the chocolate coating is perfectly smooth and melt-in-your-mouth delicious.
- Orange Candy Melts: Brings a pop of color and a touch of whimsy, making these truffles a feast for the eyes as well as the taste buds.
- Carrot Sugar Candies (optional): These sugar carrot decorations add a playful nod to the truffleโs carrot cake origins and make each piece a work of art.
How to Make
Letโs get rolling! Iโll walk you through the steps below. Iโve also provided a full ingredient list and detailed instructions in the printable recipe card at the end of this post.
- In a large bowl, crumble the carrot cake with your hands. Using a spatula, stir in about 3/4 cup of the cream cheese frosting. Add more as needed. The mixture should stay together when rolled into a ball, but not be overly sticky.
- Roll the cake mixture into 1-inch balls. Set the cake balls on a plate and refrigerate until cool, about 30 minutes.
- In a medium bowl, add the white candy melts, white chocolate, and vegetable shortening. Microwave at 30-second intervals, stirring after each until melted.
- Dip the cooled cake balls into the melted white chocolate mixture and coat completely. Set on wax paper and allow chocolate to set completely.
- In a small microwave-safe bowl, melt the orange candy melts by microwaving them at 30-second intervals, stirring after each, until melted.
- Add the melted orange candy melts to a piping bag or plastic baggie. (Use caution if using a plastic bag. If your melted candy is too warm, it can cause the bag to break.) Cut a small tip off one corner of the bag and drizzle the melted candy onto the coated cake balls. Top with a carrot sugar candy, if desired. Tip: If you struggle filling piping bags, put the bag into a tall glass (tip down), then fill. Itโs so much easier.
And thatโs it!
Once the candy coating is completely set, pack and store the truffles in an air-tight container.

Adorable Carrot Cake Truffles in no time! They make an exceptionally cute, delicious, and fun treat for Easter or spring. They also look adorable in this bunny egg holder I picked up at HomeGoods. Donโt you think?
Obviously, you can make these truffles in any cake flavor youโd like. However, I thought carrot cake was most appropriate for the season.
Frequently Asked Questions
Can I use homemade carrot cake instead of store-bought?
Absolutely! If you have a favorite carrot cake recipe, feel free to use it. Just make sure itโs cooled and ready to crumble.
What can I use if I donโt have vegetable shortening?
Coconut oil is a great substitute. It helps thin the chocolate for a smoother dip, just like shortening does.
Can I make these truffles without a microwave?
Yes, you can! Melt the white candy melts and chocolate over a double boiler on the stove. Just keep stirring to avoid burning.
How long do these truffles last?
Stored in an airtight container in the fridge, these truffles can last up to a week. But, letโs be honest, theyโre usually gone long before then!
Can I freeze Carrot Cake Truffles?
Yes, you can freeze them for up to a month. Just thaw them in the refrigerator overnight before serving.
Can I use dark chocolate instead of white?
Definitely! Dark chocolate will give the truffles a richer taste. Just keep in mind it will change the final appearance.

I made these last year and they are fantastic! Michael, any tips on making these in advance? Do you think the truffles themselves would freeze well, then I could thaw and finish them just before Easter? Thanks
Hi. These look wonderful. Do they need to be refrigerated?
Hi Michael,

These are so adorable! I am definitely adding this sweet treat to my Easter table or to share with my coworkers…maybe both!
where do u get the dipping tool and what is it called
Why do you use candy melts and white chocolate?
I like the candy melts because they are pure white in color and just a bit easier to work with. If you’d like, you can certainly use all white chocolate. ๐
