Add salt and bring potatoes to a boil over high heat. Cook until potatoes are fork tender, about 12 minutes, and drain. When potatoes are just cool enough to handle, cut each one in half lengthwise, to most resemble the shape of an egg. Use a small measuring spoon or melon baller to scoop out the center of each potato, leaving about a 1/8-inch border. Add potato flesh to a bowl. Mash potato flesh with a fork and stir in mayonnaise, mustard, relish, green onions, and pepper. Season with salt to taste. Spoon or pipe mixture into each potato “shell” and sprinkle with paprika. We are adding in about 10 of these small little honey gold potatoes to salted boiling water and we're just going to let these little guys cook until they are fork tender. Okay. Taters are done. We'll take them over and drain them. You can see that. Our next step is to take some olive oil and drizzle it generously on this sheet pan. Alright. Then we're going to take each potato. And set it on the cookie sheet. Okay that looks pretty good. Then we take a potato masher and just start mashing. Mashed potatoes. Kinda sort of. Yeah. Alright. Okay. Got them all smashed. We do. Next, we take some more olive oil and we're just going to brush the tops. It's a lot of olive oil. I know, that's what I'm thinking but that's what it said. So, here we are. Okay, that looks good. Then, we do a little salt on each one. Next is pepper. And we like our pepper, huh? We do. And then some fresh rosemary. Mm. And I know you don't like it very much so I won't do a whole lot. So first, you're going to start with some sweet potatoes. Wash those bad boys off. You can trim off anything and we're going to simply just cut these right in half. Get a cookie sheet out and we're going to put some really good quality olive oil on that cookie sheet and in the meantime, preheat your oven to four twenty-five. Gonna take our sweet potatoes. Put this cut side down. Get em covered in olive oil so that it looks just like this and you're going to put those cut side down on here and spread this out on this cookie sheet. This is super easy to do. So, my oven at 425 for about 35, 40 minutes depending on how thick your sweet potatoes are. If they're thinner, it's going to take less time. If they're thicker, it's going to take more time and you're just going to take a fork and kind of poke them a little bit after about 35 minutes to see if they're soft yet. So, let's put these in the oven. Okay, it has been about 35 minutes and these are about ready. I'm going to show you what they're supposed to look like when they are ready to go. So, on the outside right they're soft and you can stick your fork right into them and so now we're going to flip them over and we are oh my gosh you guys look at how good this looks we're going to flip this over we're going to put some butter and some seasoning on this and then we're going to stick it back into the oven for just a few more minutes it's not going to take very long okay so I melted a little bit of butter I'm going to drizzle this drizzle this on here now obviously this already has got some oil on it so you can skip this deck but I really love the flavor of butter on here and I've seen people season this a ton of different I'm just going to put on some smoked salt across the top and I'm going to drizzle it with a little bit of hot honey but you could mix up a mixture of even like mustard and honey together all kinds of different seasoning a little paprika if you wanted to do it it's completely up to you just kind of whatever you want to do on here my husband doesn't like it too sweet but I would put some cinnamon and sugar even across the top okay so that is a little bit of that smoked salt on here it's so good and then I'm actually going to take a little bit of hot honey and drizzle across the top and now put these back into the oven for really only about 10 more minutes. Guys, look at how delicious that looks. It is crazy. Okay. Burn the **** out of my mouth but I'm scared. It's so good. Ice cream. It's crazy you just put that in your mouth like that. Guys it's so good. You gotta give it a try.
