There's a couple things that I know she does that are slightly different than maybe traditional recipes. So, she goes one part walnuts. One part pistachio and then her secret ingredients so to speak is a half part of cookies. If you can't find them, you could use graham crackers and a little bit of cinnamon. So, having the zwieback cookies in there or the graham crackers helps the binding of all the nuts. When you are working with Filo especially if it is your first rodeo so to speak. Have a damp towel on top of your Filo. That way it doesn't dry out in between buttering. We are going to take a sheet butter. Another sheet. Butter. You do this 10 times. And you're just building the layers of flaky goodness right now. My mother's probably watching this right now and telling her friends how slow I am. She could make Baklava at 10 times the pace as me so that one down. Now, we take our nut mixture. Now, we're going to go with four and you go again with the filo and you just keep going until you're out of nuts. Once you fill this all up, you do the cross hatch cut. You then bake this at 350 degrees for 1 hour. Well, it is still hot. We're going to cover it with the syrup. You need water, sugar, honey, the juice of one lemon and you're going to let this sit for minimally six hours or overnight in six hours, everything has been fully absorbed into the filo and the nuts. Corner piece is always my favorite. So, look at how one, all that liquid's been absorbed. I'm sorry I couldn't help myself because of that dry back cookie see how it's firm and it's set up that's what that cookie does perfect balance of sweet butter nuts crunch Angel, you're the queen.

Try the family recipe from @krist1us, who is herself from Gavar, and you’ll reveal the secret behind these glistening pastries that are a massive and unstoppable hit at any celebration! 😋 Ingredients: Dough flour, 1000 g butter, 100 g egg, 6 sour cream, 100 g matsun (plain yoghurt), 50 g yeast, 2 tsp Filling and topping walnuts (peeled), 700 g sugar (cubed, ~ 1x1 cm or smaller), 700 g clarified butter, 500 g melted honey, 500 g Instructions: 1. In a bowl, knead soft butter with your hands, then add the eggs and mix well. 2. Dissolve the yeast in half a cup of warm water and add it to the butter-and-egg mixture. Whisk well and add in the sour cream and matsun. 3. Sift gradually the flour into the mixture and knead a very soft dough. 4. Cover the dough and keep in a warm place for 2–3 hours. 5. After, knead lightly the rested dough and divide it into 18 balls (14 equal size and 4 much bigger). 6. Grease a 30x40 cm baking pan with clarified butter. Roll out very thinly the first 2 big dough balls and fit them into the pan. Add 1—2 tbsp of clarified butter in between and spread carefully over the surface. 7. Starting from the second paper-thin sheet, brush the next 14 ones with clarified butter and fill with walnut-and-sugar mixture. 8. Brush the second last sheet with clarified butter and sprinkle with little sugar only. 9. Place the final sheet. Cut the assembled Pakhlava with a sharp knife into diamond-shaped pieces, top with egg wash, and bake until golden perfection. 10. Remove the Pakhlava from the oven and immediately drizzle with melted honey. Make sure you save it. Baklava 2 1/2 cups of chopped nuts (almonds, walnuts, or pistachios are best, or use a combination of them) 1/2 pack of phyllo dough 1 cup of ghee, melted or butter 1/3 cup of sugar 9x13 sheet pan add the ghee just enough to spread on the bottom. In the food Process the nuts until in small, even sized pieces. Add with sugar and 2 tablespoons ghee. In a separate bowl, melt the butter in the microwave. Place 1/2 of the sheet of phyllo dough into the pan. Cover with 3-4 sheets of phyllo, brushing ever few with butter use a total of 9-10 sheets for the bottom. Add the nut mixture evenly. Then add the rest of the phyllo and use the rest of the ghee. Cut into equal sized squares using a sharp knife. Bake at 325°F for 1:15-1:30 minutes or until lightly golden brown, and edges appear slightly crisp. Pour the simple syrup on top and enjoy. Simple syrup 2 cups white sugar 1 1/4 cup water Squeeze of fresh lemon juice, about 1 teaspoon In a medium saucepan, combine together the sugar, water and squeeze of lemon juice. Set on the stovetop over high heat. Try to avoid stirring it as it heats to prevent crystallization from happening, but if the sugar is not dissolving, then help it out with a few stirs.
