They are naturally gluten-free and unlike rice noodles which get clumpy after a few minutes, these noodles retain their shape and texture and soak up the sauce. I’m pairing the noodles with a healthier version of General Tso’s chicken (not fried!!) and omgeeee, this meal is a MUST for any night of the week! Makes 4 servings Chicken: 1 lb boneless, skinless chicken thighs, cut into bite-size pieces 1/3 cup arrowroot flour or cornstarch 3 tb avocado oil Sauce: 1/3 cup low sodium soy sauce or coconut aminos 2 tb toasted sesame oil 2/3 cup hoisin sauce 3 tb rice wine vinegar 2 cloves garlic, mashed 2 tsp fresh ginger, grated 2 tsp arrowroot flour or cornstarch 1/3 cup soy sauce ¼ cup rice wine vinegar ¼ cup coconut sugar or brown sugar Noodles: 3, 3.5-oz packages of korean style glass noodles Garnish: Chopped green onion Sesame seeds First, toss the chicken pieces in corn starch and set aside. Next, make the sauce. In a bowl or mixing cup, whisk together the sauce ingredients together until there are no clumps. Set aside. Next, add the avocado oil to a large pan over medium heat. Once the pan is very hot (this is important), add the chicken. Leave undisturbed for 4 minutes then scrape pan and toss and continue cooking another 4-5 minutes. Once chicken is almost cooked through (brown and not pink), pour in the sauce. Toss chicken in the sauce. Turn heat to low, cover and let cook for another 10 minutes, then turn heat off, remove cover and stir. While the chicken is cooking, make your noodles. In a large pot, cook noodles according to package directions, stirring frequently, so the noodles don’t clump together. Drain and rinse under cold water and set aside.
