Ingredients: 15-20 Medjool dates, pitted and halved 1 cup (240g) peanut butter (smooth or crunchy) 1/2 cup (75g) chopped almonds 1 cup (175g) dark chocolate chips or chunks 1 tablespoon coconut oil (optional, for easier melting) Instructions: Prepare the Base: Line an 8x8-inch baking tray with parchment paper. Arrange the pitted date halves, cut side down, in an even layer on the bottom of the tray. Add Peanut Butter and Almonds: Spread the peanut butter evenly over the dates. Sprinkle the chopped almonds on top of the peanut butter layer. Make the Chocolate Top: In a microwave or double boiler, melt the chocolate chips with the coconut oil (if using) until smooth. Pour the melted chocolate over the peanut butter and almond layer, spreading it evenly to cover.
