Recipe:
1- Medium Size Turkey (thawed completely)
4-cups of celery, onion and carrots (roughly chopped)
1-lemon (zested)
3-unsalted sticks of butter (room temperature)
3-tablespoons of fresh thyme, rosemary and sage
3.5 ounces of Achiote Paste or Red Chile Powder 
1/4 cup honey 
1-quart Turkey broth or Chicken Broth 
Procedure:
1️⃣ Ensure the Turkey is thawed before trimming the fat off and removing the giblets, neck and reserve for the gravy. 
2️⃣ Season the turkey with salt and pepper including the cavity. 
3️⃣ For the Achiote butter, combine the butter, herbs, lemon zest, Achiote and honey mixing together until smooth. 
4️⃣ Spread out the mixture inside and out of the turkey making sure it’s all evenly coated.
