you’ll need: 6 medium to hard boiled eggs 3 tablespoons mayo or 1/2 an avocado 1 tablespoon Dijon mustard 1 shallot or 1/3 of a small red onion 1/3 cup fresh parsley black pepper, onion powder, and garlic salt to taste 2 cucumbers, sliced in half lengthwise with seeds removed  Chop all ingredients (other than the cucumbers) together on a cutting board until everything is finely chopped and evenly incorporated. Add seasoning to taste, mix, then fill in the cucumber boats.
