Save and share this recipe with your family and friends! 💕 Ingredients: - 2 bags cauliflower rice (10 oz each) - 1/2 red bell pepper - 1/2 yellow bell pepper - 1/2 purple onion - Salt & pepper to taste - Pollo Asado Chicken(I picked it up from Trader Joe’s!) - 1/2 cup Mexican blend cheese Toppings: - Guacamole - Sour cream - Salsa Directions: 1. Cook your cauliflower rice according to package instructions and add to your baking dish. 2. Add your veggies and your pre marinated chicken. 3. Roughly chop the chicken to cook the chicken evenly! 4. Bake at 375F for 30-35 minutes. 5. Add your favorite cheese of choice and broil till it’s nice and melty! 6. Serve with some guac, sour cream, salsa and enjoy! ___
