Ingredients:
• -8 Peppers, deseeded (Don’t throw away the tops, instead dice the red part and discard the green)
• -3 Links of uncased mild Italian sausage (VEGETARIANS can sub with 1 cup of cooked lentils)
• -2 Tbsp olive oil
• -1 Sweet yellow onion chopped
• -3 garlic cloves minced
• -2 Celery ribs finely chopped
• -1 Large carrot finely chopped
• -1.5 Cups of frozen or fresh peas
