INGREDIENTS 3 (21 oz) cans of apple pie filling 1 box Cinnamon Toast Crunch Coffee Cake Mix 1 stick of butter thinly sliced INSTRUCTIONS Pour pie filling into a 12 inch cast iron skillet. Pour cake mix on top of the apple pie filling. Spread the cake mix out over the filling but don’t stir it together. Top with Cinnamon mixture that comes with the cake mix. Place butter on top. Smoke on the smoker at 350 degrees F for about an hour. If you don’t want to smoke it, it can be baked in an oven at 350 degrees F for 50-60 minutes. Top with vanilla ice cream or whipped cream. It’s simple comfort food and it’s what I make when I don’t have a jar of pasta sauce on hand (and often even if I do…) Last night I paired it with pan-fried lemon asparagus (a recipe I’m working on, hoping to share soon!) and Impossible meatballs. Perfection. RECIPE (will post it on the blog later this week!) 8 ounces pasta, I used linguine but any kind works 3 tablespoons butter, divided (works best with a good salted butter like Kerrygold) 3-4 cloves garlic, roughly chopped 1 teaspoon red pepper flakes (I like Aleppo pepper flakes best~ adjust to taste!) 1/4 teaspoon kosher salt freshly ground black pepper 1 medium lemon, juiced & zested Grated Asiago or vegan Parm 1. Cook pasta in well salted boiling water until al dente. Reserve at least 1/2 cup of the starchy pasta water. 2. Heat a large skillet over medium heat. Add 2 tablespoons of the butter. Once melted, add the garlic, red pepper flakes, salt, and black pepper, to taste. Saute until the garlic is golden and fragrant, 2-3 minutes. 3. Reduce heat to low. Stir in the lemon zest, cooking another 30 seconds. Stir in the lemon juice (3-4 tablespoons) and 1/4 cup of the pasta water, whisking to combine. 4. Add in the cooked pasta, tossing to coat. Add the remaining tablespoon of butter or a drizzle of olive oil, for a lighter option. Add the remaining pasta water, if desired. 5.
