195K views · 1.2K reactions | Creamy bacon & greens ditalini✨ ▪️16 oz. Ditalini Pasta (or pasta of choice)▪️12 oz. Bacon, sliced in 1/2” pieces▪️1/2 of a Medium Sweet Onion, diced small▪️2 Garlic Cloves, finely chopped▪️4 Tbsp Flour▪️4 Cups Milk▪️1+1/2 tsp Kosher Salt▪️1/2 tsp Black Pepper▪️1 Dash Cayenne Pepper▪️8 oz. Swiss Chard, roughly chopped (or other leafy green)▪️1/2 Cup Parmesan Cheese, plus more for serving▪️ 1️⃣ Bring a pot of generously salted water to a boil for the ditalini pasta. Once boiling, cook pasta 2 mins less than package directions (until very al dente), drain, and set aside. 2️⃣ Meanwhile, place the bacon in a medium pot and set over medium-high heat. Cook, stirring a few times, until crispy (9-12 mins). Using a slotted spoon, transfer the bacon to a paper-towel-lined plate to drain; set aside. You should have ~1/4 cup of fat left in the pot. 3️⃣ Turn the heat down to medium and add the onion. Cook while stirring for ~2 mins until the onions are starting to soften, then add the garlic. Cook for 1 min, then add the flour. Cook the flour for 1 min while stirring, then start gradually adding the milk 1 cup at a time, stirring to fully incorporate it before adding more. 4️⃣ Once all the milk has been added, turn the heat to medium high and cook, stirring often, until the sauce begins to bubble and thicken (3-5 mins). Add the salt, pepper, and cayenne. 5️⃣ Turn the heat down to medium and add the chard. Cook for ~1 min until it turns bright green and becomes tender, then add the parmesan and ditalini. Cook for 1-2 mins until the pasta is your desired tenderness, then stir in the crispy bacon and turn off the heat. 6️⃣ Serve with freshly grated parmesan on top and enjoy! ⏲10 minute prep time + 30 minute cook time Recipe serves 6 people Subscribe to my newsletter for all recipes delivered to your inbox weekly (w/ printable PDFs) + access to the searchable recipe archive. 127K views · 19K reactions | Everyone in my house is some sort of congested and sick right now so we have been absolutely devouring pastina + using up all of the nutrient bombs i made last month and stored away in the freezer!! So many requests for an updated pastina recipe in my DMs, so here she issssss!!! 💫✨⭐️ The little frozen cubes are something I call nutrient bombs - they're optional!! I just love amping up all my brothy pasta dishes with puréed veggies and a lil extra bone broth. For that recipe, tap the "nutrient bomb" highlight saved to my IG profile! Recipe makes about 4 servings. It's great to stick any leftovers in the fridge and reheat by adding some more broth and warming on the stove, too!! WHAT YOU NEED: 32 oz chicken broth (i like to do 50/50 reg broth:bone broth) 5 oz puréed veggies/broth (check out my nutrient bomb highlight for my recipe!!) 1.5 cups pastina (i buy @barillaus on amazon) 3 tbsp butter 1/2 cup freshly grated parmesan-reggiano evoo, parm + black pepper for garnishing WHAT TO DO: 1. Pour the broth and nutrient bombs into a deep skillet or sauce pot and bring to a boil. 2. Add the pastina and cook for about 6 minutes until the broth liquid is about 80% absorbed. 3. Add the butter and parmesan, mix until melted and combined. 4. Serve immediately and top with evoo, freshly cracked black pepper and more parmesan cheese. | Jane Hardy

I'll start by adding 250 grams of pasta into a pot. I'll add 1 teaspoon of salt. I'll add water until it covers the pasta. I'll let it cook for 10 minutes. Then, in another pot, I'll add a chopped onion. I'll add a little olive oil to help brown the onion. I'm going to use this spatula to stir and you'll be surprised by the result of this recipe. I'll add a clove of garlic. I'll keep stirring until these ingredients are well combined. When you notice that the onion is starting to turn golden, it's time to add the next ingredients. I'll add half a cup of tomato sauce. One teaspoon of oregano. One table spoon of sugar, one teaspoon of chili flakes, I'll stir again. Let me know if you'd add any other ingredient to this recipe. If you know a special secret that pairs well with pasta, feel free to share it. I'd love to hear it. I'll add a/ 4 cup of water. I'll stir a bit more. You're learning an exclusive method of preparation that will amaze the people in your house when you make this delicious dinner. I'll add one cup of heavy cream. And I'll also add 100 grams of grated mozzarella. I'll stir once again. This recipe has several steps where we need to mix the ingredients well. So take your time and you'll get an incredible result in the end. I'll add one tablespoon of butter and keep stirring. See how easy it's been to prepare this recipe. I love teaching recipes like this that you can make quickly and with few ingredients. It's perfect for any occasion. Now, I'll add the pasta I set aside earlier. Mixing it with these ingredients. I'll give it one final stir. I made this yesterday for my friends and they liked it so much that they asked me to come here and teach it to you. The best part of this recipe is that you can prepare it in no time and with just a few ingredients. That's why it's become a routine at my house and I'm sure it will be at yours too. I'll plate it up and try this delicious dish. Look how beautiful it turned out. The smell is so good that even your neighbors will comment on it.
