Ingredients ¼ wombok, finely sliced 2 carrots, julienne or sliced 1 Lebanese cucumber, finely sliced 12 lychees, seeded & halved 2 shallots (scallion) finely sliced 1/3 cup roasted peanuts, lightly crushed 1 birds eye chili, finely sliced Juice 2 limes 2 tbsp fish sauce 1 tbsp tamarind puree 2 tbsp extra virgin olive oil 12 cooked medium tiger prawns, peeled, deveined Handful coriander leaves Extra lime to serve Method Prepare all the ingredients as specified above. In a large shallow bowl, combine the wombok, carrot, cucumber, lychees and 1/3 of the shallots and peanuts. In a small bowl combine the chili, lime, fish sauce, tamarind and olive oil. First you want to heat up some coconut oil, add your seasoning and fry some rice for a few minutes. Add your water and cook until it is done.
