Hopefully, we're live. Hey, everybody. Tonight, we are making a new kind of casserole. It's actually been on the block for a long time. It's one of those hidden gems that nobody knows about. So, I'm bringing it back to life tonight. I'm showing you because it's one of my favorites but we are going to make chicken and baked potato casserole. So easy. You just throw it in a pan. It cooks. It cooks for a long time because it does have the potatoes and the chicken but the great thing is you don't have to precook anything. You throw it all in raw. So, going to jump right in. I have three recipes that I chopped up and so this is like a nine by nine pan. It's an oval shape but you need one that's about nine by nine. You can use a square. You're going to dump half of the potatoes in the bottom. So, I just roughly chopped them. You want em to try and be about the same size. So, put em all in the bottom and then the next thing we're going to do, I have a pound of chicken, a pound, pound and a half, whatever you want to use. I have pound of chicken that I cut up into bite-sized pieces. So, same thing like the potatoes. You want em to be about the same size and you're just going to dump the chicken right on top of the potatoes. So, go like that This pan's going to fill up really quick. I can already tell it is. This is going to be a loaded casserole. Okay. So you get that in there. Now we want to do some seasoning because that's where our flavour is going to come from. So always salt and pepper. Just go ahead and top off the chicken. I like to do a little bit more. You can do as much or as little as you want. And then I'm going to do some pepper on there too. And then I also love to do garlic powder. I just think it goes so great with the chicken. So you can do any seasonings that you want. But that's what I'm going to do today. So garlic powder, salt and pepper. And then we're going to do just some green onions. So I chopped up about three green onions. I'm going to do half of them on top of the chicken. Whoops. I'm spilling all over the place. So as you half on top of the chicken. And then we're going to do this is like five strips of bacon that's been cooked and chopped up. You can use pre-cooked bacon like that you get at Costco or the grocery store or you can go ahead and cook your own bacon however you want. Um you could also use bacon bits if you want. So just go ahead top it on top of the chicken. And then we're going to do cheese. So you need about half a cup to three quarters of a cup. Or you can go as crazy as you want on your cheese. So we got that. Okay. So now we're just going to repeat those layers again. Obviously not with the chicken but with the remaining potatoes that we have. So go ahead and spread it out. It fills this pan right up. I probably should have used a little bit bigger pan but that's okay. Okay and then again with seasonings. So I'm going to go pepper again. And then we're going to do salt. And then we've got some garlic powder. And like I said, do any seasonings that you want. Any of those will work and then the remaining green onions. Now, if you don't like green onions, you can just use a regular onion. I love the color that this adds. They also feel like it taste like an authentic baked potato loaded baked potato. So, but use whatever onions you have and then I'm going to use the rest of the bacon that I have chopped up. So, just sprinkle that on there and then, of course, end with the cheese another bit of cheese. Get that all on there. Okay and the last thing that we are going to add is a half cup of cream. This is what's going to make this all come together. Be so creamy. Be so good. So this is just heavy whipping cream. And I'm going to do a half cup. You can eyeball it if you want. I never good at eyeballing like quantities like this. So I'm going to use a measuring cup. But you just want to kind of drizzle it over the top. Try to get it throughout the whole casserole And there you go. So now we're going to cover it. I forgot to grab foil. Let's see right here we're going to cover it with foil and this is going to cook at 350 degrees for an hour and a half but after the first I want to say hour, you can take this off and let it cook without foil for the last 30 minutes. So, I'm going to throw this in. Let it start cooking. But I want to show you another option. So 90 minutes total but I'm just going to set it for an hour right now. So that I remember to take the foil off in an hour. The other thing you can do if you don't want to cook it in your oven. Let me go back. Is you can do this in your slow cooker. And I actually have had this going all day. So it's the same exact steps. You're going to layer your potatoes. Do you want to come in close so they can see? Delicious goodness. So good. The only thing you're going to do is you're going to cook it on low for five to six hours. Instead of doing the oven for 90 minutes, this will just cook on low for five to six hours. You're going to get the same result and it's so good. So, there's two options to easy cook your dinner. Were there any questions that people had? Um does the cheese stick to the foil? Um I have not had that problem. If you're nervous about it, you could spray the foil and it would work, it would be just fine. No. So, would do that but I haven't had any problems with it so okay any other questions not really awesome just hello from all the different states all over my daughters are a video videographer can we say that yes our video girls tonight so she's been getting all your comments thank you everybody who's joining from all over the place I'm in Utah but I know a lot of you are spread out everywhere and even different countries so it's so fun thanks for joining us there's another question okay another question is will red potatoes work yes actually in kind of potatoes will work I do like how hardy the recipe potatoes are like they don't get mushy after cooking so long in a slow cooker but in the oven I love red potatoes and Yukon gold potatoes are delicious in this dish those are the only ones I've tried for this dish but I think any potato would work even I bet you can make this with sweet potatoes if you needed I I have a brother-in-law Lauren's husband is allergic to potatoes so they just substitute sweet potatoes and it should work fine for this another one she came and lay it and she said were the potatoes raw yes so potatoes are raw so for those of you who are late there is a link in the description to what we're making but it's our chicken and loaded baked potato casserole. So potatoes are raw. Chicken is raw. But it is going to cook in the oven for 90 minutes. Or in your slow cooker for five to six hours. So this is what's so nice is we don't have to par boil anything. We don't have to precook anything like it's dump and go. Anything else? Can it work in the instant pot? Okay so that's the one that I have not tried yet. But stay tuned because I'm trying to master it so that you get the same deliciousness in your instant pot. So that one I haven't quite mastered but it's coming. And could you use frozen potatoes? I don't see why not. It would definitely cook a lot less. If you use like a frozen hash brown potato whether in cubes or shredded, you'd probably only have to cook it for about 30 minutes in the oven and maybe two ish two to three hours in your slow cooker. It will cook a lot faster just because frozen potatoes they're kind of like precooked. They're a little par boiled so they're softer. They'll cook faster but yeah and can't substitute the heavy whipping cream for the whole cream.
