You can use the mild, hot, medium taco seasoning, whatever you like. Whatever brand, just make sure to get it evenly distributed onto our meat this a nice, quick mix so that everything gets coated in that taco seasoning. Ooh, this is smelling delicious. I like to leave just a little bit of that grease in there so that it has something to attach that taco sneezing to the meat. Once that is nice and tossed in our we are going to go ahead and add two cups of water right into our pot just like so. I have one can of no salt added diced tomatoes. You can use whatever tomatoes you like. I know they have like a cilantro tomatoes. You can even use rotel if you'd like but I just like that this one is no salt added. Give this a quick little mix. Ooh and you guys might think it's a little weird that I added the water but you will see what we're making and you will love it. It's all-in-one pot dish. It's so good. Alright. Now, add some green chilies. I'm going to pop them right in there with everything. Probably turn up this heat just a little bit. To a medium heat. Give that another good mix so that the tomatoes, the green chilies, and everything is evenly distributed. Okay. Now, for the main event, we have our rice. I like to use the minute rice because it's already washed but you can use whatever rice you like and we're going to add two cups of rice to our Oh yes. Give that a nice good stir. So you want to add as much rice as you did water and that is why we added the water to cook the rice. Okay give this a nice quick stir. I think I'm going to add a little bit more taco seasonings. I want it to be super potent. Make it super flavorful. Right? Yeah definitely. Taco seasoning does good with that. Okay. Once we get this well mixed it is time to cover it up. I'm going to go ahead and grab the lid. And we're going to let this sit until that rice is cooked. Alright, this is ready. Smells delicious. Smells amazing. Let's give it a nice, quick mix. Oh, see this. No liquid yet. That's or no liquid left. That's how you know it is ready. Okay, we're going to flatten this out because we have something we're going to add to this super quick. I already turned off my stove. We're going to add our Mexican cheese and this is just going to melt right on top because it's still hot. We are going to go heavy handed with that. Make sure we get cheese all over the dish. Oh, this is so delicious. All the great flavors. We're going to put that lid back on and let that cheese melt. The steam will just melt it. Alright, it's been a couple minutes. That cheese is melted. Oh, that was fast. Yeah, super hot. So, alright and I'm going to bring in my plate and I have some tortillas. We are going to serve our rice and meat in a tortilla just like so. Cheesy and delicious. This looks beautiful. While we were waiting for the smell, I was thinking about how this reminds me of the insides that go in a stuffed bell pepper. Gotta love it.
