Perfect for those No Meat May-ers in the Winter season right now, who are trying to eat more fruit and veg! RECIPE - SERVES 4 - 1 large bunch lacinato kale, stems removed, finely chopped - 1/2 lemon, juiced - 1 tsp olive oil - 14 oz can chickpeas, drained - 1/2 cup pomegranate seeds - 1 large mandarin, peeled and cut into 1” pieces - 1 firm avocado, cubed - 1/4 cup roasted salted sunflower seeds Raspberry Vinaigrette - 3 tbsp olive oil (sub 2 tbsp runny tahini if oil-free) - 1-3 tbsp water (for desired thickness) - 1/4 cup sugar free raspberry jam - 1/4 cup champagne vinegar - 1/4 tsp salt and pepper - 1/2 lemon, juiced - 1 tbsp maple syrup METHOD 1. Add the kale to a large salad bowl and drizzle with lemon juice and olive oil. Use your hands to massage for 15-30 seconds until tender. Add the remaining ingredients for the salad. 2. Add all ingredients for the dressing to a blender and puree until smooth and creamy. Season to taste adjusting salt, pepper, and maple syrup.
