The Mighty Meatloaf – Filling and Versatile I call this Everyday Low FODMAP Meatloaf because you will have time to make it, even on the busiest of days. While you could use all beef, a combo of beef, veal and pork makes for a particularly succulent meatloaf.

• 1 1/2 lbs Ground beef
• 1/2 lb Ground pork
• 4 slices Meaty bacon
Produce
• 1/2 Carrot, medium
• 1/4 cup Flat leaf parsley, fresh
• 1/2 Red bell pepper, medium
• 1/4 cup Scallions
• 1/2 tsp Thyme, dried
Refrigerated
• 2 Eggs, large
Condiments
• 1 2/3 tbsp Balsamic vinegar
• 1 tbsp Dijon mustard
• 2/3 cup Ketchup
• 1 tbsp Worcestershire sauce
Baking & Spices
• 1 Black pepper, Freshly ground
• 1/3 cup Brown sugar, firmly packed light
• 1 tsp Kosher salt
Oils & Vinegars
• 2 tsp Low fodmap garlic-infused oil
Bread & Baked Goods
• 2 1/2 pieces Low fodmap gluten-free white bread
Dairy
• 1 2 cup (120 ml) lactose free whole milk, 2, lactose free
