Air Fryer Artichoke Salad with Parmesan Dressing Serves 4-8 (whether a main or a side) 2 Cans artichokes in water, drained 1 Shallot 6 stalks celery, diced 6 cups Brussels sprouts, shaved 1 bunch parsley, chopped 2 cloves garlic, minced 2 cans white beans, drained 1/2 cup parmesan Juice from ½ lemon ½ cup olive oil ½ tsp dijon Salt and pepper Drain 2 cans of artichokes and pat dry.
