Instructions: Preheat the Oven: Preheat your oven to 375°F (190°C). Flatten the Chicken Breasts: Place each chicken breast between two pieces of plastic wrap and flatten it to about 1/2 inch thick using a meat mallet. Season the Chicken: Season both sides of the chicken breasts with garlic powder, onion powder, salt, and pepper. Stuff the Chicken: Lay the flattened chicken breast flat and layer with fresh spinach, sliced roasted red peppers, and mozzarella cheese. Roll and Secure: Roll the chicken breast tightly and secure it with toothpicks to hold the filling inside. Bake: Once browned, transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (75°C).
