In no particular order:
BeamNG.drive - Driving sim with very realistic crash physics and lots of mods. Plenty of way to goof off.
Baldur's Gate 3 - But it can be very complex and overwhelming immediately if you're not familiar with D&D 5E's rule set.
Cruelty Squad - First person shooter with a unique art style
Dave the Diver - Kind of like Motherload meets Diner Dash. Wasn't for me, but many people seem to like it
Dredge - Story-heavy fishing game
Subnautica - Open-world survival, but in the ocean
Embr - Co-op or solo firefighting game
