If you’re looking for a quick and easy, no-bake dessert to serve this spring or summer, it doesn’t get any easier than this Easy Raspberry Fool.

Like me, you’re probably wondering why it’s called a fool. I had a few theories myself……like it’s so easy you’d be a fool not to try it. Or maybe because it’s practically fool-proof.

After doing a bit of online research, I concluded that nobody really knows why this tasty treat is called a fool. What we do know is that it’s an English dessert, originally made with gooseberries. 

And that back in the day, it was spelled foole–in the old English tradition.

But aside from that, the name of this dessert is a mystery. What isn’t a mystery is that it tastes amazing, and you can whip it up in about five minutes flat!

The first time I made this raspberry fool, I was just getting Easter dinner on the table and felt like something was missing. We needed a fluffy dessert-like salad to round out the meal.

I literally threw this together while my husband was slicing the ham. That’s how fast and easy it was to make! Maybe they call it a fool because you can trick people into thinking you’ve made something difficult and fancy?

Sure, you can argue that this dessert is basically just some mashed up fruit and whipped cream. But when has that ever been a bad thing?

Although I’ve only ever made this recipe with raspberries, I’m sure you could use other fruits, like blackberries and strawberries. You’ll just want them to be fairly ripe so they mash easily.

This Easy Raspberry Fool is such a great recipe to have on hand for those times you need to serve last minute guests, or you simply have a craving for something sweet. Enjoy!

  • Fresh raspberries
  • Powdered sugar
  • Lime juice
  • Whipping cream

Ingredients 

  • 2 cups fresh raspberries
  • 6 tablespoons powdered sugar divided
  • 1 teaspoon lime juice
  • 1 1/3 cups heavy whipping cream

Instructions

  • In a medium bowl, mash the raspberries with 3 tablespoons of the powdered sugar and the lime juice. Refrigerate while you prepare the whipped cream.
  • With an electric mixer, beat cream and remaining powdered sugar on high speed until stiff peaks form. Fold raspberry mixture into whipped cream.
  • Spoon into dessert dishes and refrigerate until ready to serve.

    I make fool with cranberries cooked in a little orange juice concentrate; no sugar. The oj gives a bit of sweetness to the cranberries. I’ve also made it with blueberries. They are sweet enough that no sugar is needed.
