All three of The Lord of the Rings making-of documentaries are impressive, especially the ones that focus on The Fellowship of the Ring and The Return of the King. Like the trilogy, The Two Towers is my least favorite, but it's still plenty interesting.
I got through all of these today, on a day off, much as I marathoned all three of the theatrical editions last weeked, on a day off. Lots of the behind-the-scenes footage is very valuable, and the whole approach for this trilogy of documentaries was admirably honest.
The only other takeaway I'd have is that I realize there's even less CGI in these movies than I originally thought. There were shots I thought were entirely done with computers, but they'd fly cameras through these giant actual models and then add in some CGI creatures later. I think almost every shot here has some kind of practical or non-CGI element to it, and I'd have to assume that's one of the main reasons why the whole trilogy still looks so good 20+ years later.
