Ross getting hit in the back by a water balloon in Elizabeth's apartment was unintentional and as such his reaction was ad-libbed.

Goofs
At the beginning scene of Chandler's proposal dinner, the waiter brings a bottle of champagne with two glasses, one of which is already filled and he is pouring the other one. However the next shot both glasses are empty. And the white napkin around the champagne bottle also disappears.
