My Rating Scale (out of 4): 4 - great 3.5 - pretty good, but not great 3 - okay, decent, enjoyable; sometimes slightly good 2.5 - acceptable/adequate/so-so, but definitely lacking (thumb to the side) 2 - lame, but still watchable; mediocre 1.5 - pretty bad, but still has at least a few definite notable positive aspects 1 - terrible, but has a few small glimmering positive points 0.5 - terrible, very few redeeming qualities (hardly worth mentioning) 0 - completely awful, negligible (if any) redeeming qualites

This list includes not only trilogies, but any film series that I like with three or more installments.  This list is in no particular order, except for the first one (Star Wars).

Not all of the installments in these series/trilogies have to be good (good in my opinion, of course) as long as most of them are good or at least okay.

As of right now, there isn't a single Pixar film that I dislike. Even Cars 2, my least favorite Pixar film, is okay (in my opinion, of course).

So, here is my ranking of Pixar's films from best to worst (and again, Pixar's worst film is still an okay film).
