Coffee & chilli chicken koftas with onions | Ottolenghi Recipes

The coffee adds a smoky, earthy quality to these koftas, but without dominating proceedings. Swap the cascabel chilli for another mild dried chilli, such as guajillo, if you prefer. And it’s worth making double or triple the coffee rub, because it works wonders on all sorts of grilled meats and vegetables.

Ingredients

Meat
• 3 cut into 4cm pieces 500g boned and skinned chicken thighs
Produce
• 1 tbsp Cascabel chilli, ground
• 5 tbsp Flat-leaf parsley
• 2 Garlic cloves
• 1 Lemon - half finely zested, large
• 1/2 Onion
• 1 1/2 tbsp Picked mint, leaves
• 2 Red onions
• 1 Tomato (120g), large
Baking & Spices
• 1 1/2 tsp Brown sugar, soft light
• 1 tsp Paprika, smoked
• 1 Salt and black pepper
Oils & Vinegars
• 75 ml Olive oil
Nuts & Seeds
• 1 1/2 tsp Cumin, ground
Drinks
• 2 tbsp Coffee, finely ground
