Raspberry Palmier Recipe (2 Dozen)
Ingredients: 14 oz puff pastry, thawed 1/2 oz freeze-dried raspberries 1/2 cup granulated sugar, divided Optional: 2 oz white chocolate Instructions: Pulse raspberries in a food processor until powdered. Mix ⅔ sugar with the raspberry powder. Sprinkle remaining sugar on pastry. Roll out, then flip and sprinkle with raspberry sugar. Fold pastry in half, then fold ends toward the middle, adding more raspberry sugar. Repeat folds and sprinkle with regular sugar. Press gently with a rolling pin and freeze for 30 minutes. Preheat oven to 400˚F. Cut into ½-inch slices and bake for 8-10 minutes. Flip and bake for 4-5 more minutes until golden. Cool, dip in melted white chocolate, and sprinkle with raspberries.
