Spinach Mascarpone Tagliatelle Recipe

Ingredients (serves 1): • 100g spinach • 1 garlic clove • 2 tbsp mascarpone • 20g parmesan • Pinch of grated nutmeg (optional) • A mug of pasta water • Juice from 1/4 lemon 100g tagliatelle How to: • 1. Heat a tbsp of oil to a large saucepan. Add the spinach with a good pinch of salt and pepper. Leave to wilt. • 2. Remove the spinach from the pan and add to a food processor along with the garlic and blitz. Alternatively, finely chop the spinach. • 3.
