Kung Pao chicken with noodles. Mm. Let's dice up some bell peppers. We're going to do green and red. All of it into a bowl. Next we're going to chop up some celery into the same bowl. Then dice up some carrots into the bowl. Dice up an onion. Put it in a separate bowl. Then finally mince up some garlic. Then set it aside with the onions. Slice some chicken thigh into quarter inch slices. Now we're going to marinate the meat with some soy sauce, dark soy sauce for color, baking soda for tenderizing and some pepper. Now give it a good mix set it aside. Now let's make the sauce with some low sodium chicken broth, shaoxing wine, oyster sauce, soy sauce, dark soy sauce for color, distilled white vinegar for some tartness, sugar for balance, and some sambal chili paste. I like it spicy but you can use as much as you want. I almost forgot some chicken bouillon. Give it a good mix and let's take it to the siddle. Add some oil to your wok. Add in the marinated chicken. Spread it out and leave it alone to give it a nice char. Once the chicken is cooked through, set it aside. Then we're going to add the garlic and onion and some dried chili to make it extra spicy. Saute everything together and to drop the spice. Be careful breathing because it gets really spicy. Now we're going to add in all of the veggies. I'm going to use udon noodles for this recipe but you can use whatever noodles you want. Add blanched the udon noodles for about two to 3 minutes. Add the chicken back in then pour in all of the sauce. We're going to let it cook down for a couple minutes. Once the sauce comes to a boil, I'm going to thicken it with a little cornstarch slurry. Alright, now she's thick and glossy. Last and final step is adding roasted peanuts because it wouldn't be kungpao without it. Give it one last toss and let's eat.
