• 2 cups sushi rice
• 2 1/2 cups water
• 1/4 cup rice vinegar
• 1 tbsp sugar
• 1 tsp salt
• 2 chicken breasts, diced
• 1/4 cup soy sauce
• 2 tbsp honey
• 2 tbsp mirin
• 1 tbsp sesame oil
• 1 avocado, sliced
• 2 tbsp sesame seeds (black and white)
• Fresh cilantro for garnish
• Sriracha sauce for drizzling
Instructions:
• Prepare Rice: Rinse sushi rice until water is clear. Cook rice with water in a rice cooker.
• Season Rice: Mix vinegar, sugar, and salt. Fold into cooked rice, cool.
• Marinate Chicken: Combine soy sauce, honey, mirin, sesame oil. Marinate chicken for 15 minutes.
• Cook Chicken: Sauté chicken in a skillet over medium heat until cooked and caramelized, 8-10 minutes.
• Assemble Stack: Layer sushi rice in a round mold, top with avocado slices, then teriyaki ch
