English muffin breakfast sandwiches
Recipe: ⁃ Whisk 12 eggs, some milk, salt, and pepper ⁃ Pour egg mixture in lined half sheet pan, top with chopped veggies ⁃ Add breakfast patties in a lined sheet pan, add both sheet pans to preheated oven. ⁃ Bake at 350˚F for around 17 min, or until the eggs are set. ⁃ Remove from oven and allow to cool. ⁃ use a cup to cut out 12 egg rounds ⁃ insert half with egg, meat, cheese slice in-between the English muffin slices Wrap in parchment paper If consuming immediately, heat the sandwiches at 350˚F for about 6 min, or until the cheese melts If not consuming immediately, store in the fridge for up to 5 days and in the freezer for up to a month. reheat: ⁃ Thaw overnight in fridge. ⁃ wrap in paper towel. ⁃ Microwave for 60 seconds & stand for 2 min
