Chelsey Watkins on Instagram: "Toddler Lunch Idea | Pizza Roll Ups 🍕 One of our favourite midweek lunches, really easy to make and a change from a normal sandwich! 🧀 you can add whatever fillings you like, we kept it simple with just cheese but you could add ham, chicken or pepperoni too. 🍅 use a ready made pizza sauce or make your own by mixing together 1 TBSP tomato purée, 2 TBSP water and a pinch of mixed herbs 🍕 remove crusts from 2 slices of bread, roll flat with a rolling pin before adding your pizza sauce and grated cheese of choice (I used mozzarella but you can use cheddar if you prefer). We’ve seen a few different styles of baby biscuits but wanted to try to make some that used only fruits/veggies and flour to keep them as simple and healthy as possible, and to have an oil/butter free version for those who’ve been asking 🤍 INGREDIENTS: 1 medium apple (140g pre peeled and pre cored) 1 medium sweet potato (190g pre peeled) 1 cup/150g of self raising flour HOW TO: 1. Peel the apple and sweet potato and dice (discarding the apple core). 2. Steam and cook over medium heat for 10-15 minutes until soft. 3. Once cooked, add the apple and sweet potato to a bowl and mash with a fork to remove any lumps. 4. Add the flour and mix to form a dough (using hands to combine. If it feels to sticky keep kneading for a few minutes, if it’s still sticky add 1-2 Tbsp of flour and mix again). 5. Roll out the dough to approx 1/2 a cm in thickness. 6. Use cookie cutters or a knife and cut out the biscuits. Remove any excess dough, and roll that out, repeating until there is no dough left (this will make around 45 biscuits). 7. Cook in a preheated oven on 180c/350f for 12-15mins until cooked. 8. Allow to cool before serving. Store in a container on the bench for 3 days, in the fridge for a week, or ❄️ freeze for up to 2 months.
