This Tofu Banh Mi recipe is a vegetarian take on the classic Vietnamese sandwich traditionally filled with Vietnamese cold cuts, pork sausage, pork belly and/or pâté. Instead of any meat, we stuff crusty baguettes with crispy tofu steaks, pickled vegetables, a spicy mayo and of course fresh cilantro. Vegetarian of not, you’ve got to get in on this!

My miso-marinated tofu cubes are pan-fried with ginger and so tangy! Sticky, crispy and so satisfying. This can be served in a soup, rice bowl, stir fry, ramen, noodle soup, salad, and more. I love adding broccoli, sesame and chilli flakes for a spicy ramen. The marinade is made from 4 simple ingredients including soy sauce and can be left to marinate for just 15 minutes. Vegan, oil-free, baked in a pan, healthy and so delicious! Ginger gives it a kick of freshness while tamari packs flavour.
