Emmie Keefe | Healthy Emmie on Instagram: "Recipe below! 1-INGREDIENT LENTIL TOFU! 🤯 Directions: 1. Add 3/4 cup red lentils and 1.5 cups of boiling water to a blender. Do not blend! Just let it soak for 20 minutes. 2. Blend the lentils and water. 3. Add the mixture to a saucepan with 2 cups of room temperature water. 4. Bring to a boil and whisk for 6-8 minutes, until it’s super thick. 5. Pour into an 8x8 inch pan. 6. Refrigerate (preferably overnight.) 7. To make it “deep fried,” I marinate it in soy sauce/liquid aminos and bake it at 425F on parchment paper until it turns crispy, about 20 min for me!
