I've gotten so much heat from the canning community over this, but it doesn't change what we know to be true. You don't have to cover your potatoes with water to safely can them. We've been doing this for years. Others have been doing this for longer. Wanna know how? Here you go: 1) Scrub your potatoes well. This is the crucial step that will remove any toxic spores for contaminating your food. Dice up and then let them sit overnight in lemon water. This will help draw out any excess starch. 2) Rinse the potatoes and pack tightly into your jars. Add 1 tbsp sea salt to each quart jar (halve for pints). Leave
