This meal was absolutely delicious and had my youngest asking for seconds. 😋 RECIPE - Makes 6 cups INGREDIENTS: 1 spaghetti squash (3 cups) 1 Tbsp avocado oil salt & pepper to taste 1 cup heavy cream 4 Tbsp butter 1 & 1/2 cups shredded Parmesan cheese 1/2 cup shredded mozzarella cheese 2 tsp minced garlic 1 tsp salt 1/2 tsp black pepper DIRECTIONS: 1. Preheat oven to 400 degrees Fahrenheit. 2. Cut the spaghetti squash in half. (Long ways will produce short “noodles” and short ways will produce long “noodles.” 3. Use a spoon to scoop out the seeds and guts (just like a pumpkin!) 4. Brush the avocado oil on the inside of the squash and season with salt and pepper. 5. Place face down on a parchment lined baking sheet and bake for 30-40 minutes. 6. Remove from the oven and use a fork to shred the insides. 7. Scoop the noodles out and place them in a greased casserole dish. 8. Add the heavy cream, butter, garlic, salt, pepper and 1 cup of Parmesan cheese. 9. Stir to combine and then top with the remaining cheeses. 10. Bake for 20 minutes. You can add these noodles to soup, stir-fry them or serve with a simple sauce. Noodle Dough - 500g plain flour - 1/2 tsp salt - 6 eggs - Cornstarch, for dusting Hot Oil Sauce (optional) - 2 tsp minced garlic - 2 tsp minced spring onion - 1 tsp chilli flakes - 1 tsp white sesame seeds - 2 tbsp neutral oil - 1 1/2 tbsp light soy sauce - 1 tbsp black vinegar - 1/2 tbsp dark soy sauce Mix flour and salt together on a clean work surface. Make a well in the centre then add in the eggs. Using chopsticks gently break up the eggs, then using your hands working the dough until a shaggy ball. Don’t worry if it gets messy, it will all come together. Knead for 8 - 10 minutes until smooth then wrap in cling wrap and rest for 30 minutes. Cut into 4 portions and working with 1 portion, roll to your desired thickness. Make sure to use cornstarch to dust. Fold the dough onto itself then cut to your desired thickness. To cook the noodles, bring a large pot of water to a boil and cook for 60-90 seconds. Drain, and use as desired. To make the hot oil sauce, place into a mound the minced garlic and spring onion, chilli flakes and white sesame seeds. Heat oil until hot then pour over to sizzle.
