Perfect for cakes and also with fondant or soufflé Brown Sugar Caramel Cream • 550g Double/Heavy Cream • 1 Vanilla Pod/1 To Vanilla Paste • 3g Powdered Gelatin (200-250 Bloom) + 18g Cold Water • 70g Light Brown Sugar • Pinch Sea Salt • Bloom the gelatin and water. • Heat the cream and vanilla, until it's steaming. Set it aside but make sure it's still hot when you use it. • Add the sugar to a pan and make a dry caramel (you're almost just melting the sugar and then cooking it for a minute longer, that will be enough flavour!) • Pour over the hot cream and whisk for 1m. • Pour this hot mixture over the gelatin and salt. Blend, then chill for 6h, covered. If you need it quicker, pour it into a baking tray lined with cling film, then freeze it for 45m before putting it in the fridg
