Most recipes use Prosecco and orange juice, but I wanted to keep mine non-alcoholic, so I used my favorite flavor of Olipop! These are perfect for snacking, garnishing, or even gifting during the holidays. Credit: I first saw this on @cookiterica and @wiseeats and couldn’t wait to try! ✨Ingredients✨ 12 oz (about 2 1/2 cups) fresh cranberries 2 cans Crisp Apple @drinkolipop or sparkling apple juice 1 1/2 to 2 cups powdered sugar or powdered monk fruit for lower sugar (adjust for coating preference) 1. Prep Cranberries: Rinse and pat dry the cranberries. 2. Soak Cranberries: Place cranberries in a large bowl and pour in the 2 cans of Olipop. Soak for 6 hours or overnight for maximum flavor. 3. Drain & Coat: Drain cranberries well, but do not rinse. Toss cranberries in 1 1/2 cups powdered sugar/monk fruit for a light coating or up to 2 cups for a thick frosted look. Make sure they’re evenly coated. 4. Bake: Preheat oven to 200°F. Spread cranberries on a parchment-lined baking sheet in a single layer. Bake for 6 minutes to set the coating (do not over-bake or the cranberries will get mushy) 5. Cool & Serve: Let cranberries cool completely; they will harden as they cool. Store in an airtight container at room temperature for up to 5 days. ✨Note: Powdered monk fruit can coat similarly to powdered sugar, but there are a few differences. ✨Monk fruit can absorb moisture differently, sometimes forming clumps if not sifted well. Powdered sugar caramelizes slightly when baked, while monk fruit may not crisp as much. ✨For candied cranberries, try a 50/50 mix of powdered monk fruit and powdered erythritol (if you use it), as erythritol crisps better when baked. ✨You could also use 50/50 real powdered sugar and powdered monk fruit.
