This easy, gluten free banana cake recipe couldn’t be more delicious! Imagine if banana bread and vanilla cake had a baby….that’s exactly what this delightful banana cake tastes like. Yum!
400g silken tofu 200g dark chocolate (70%) 1/2 tsp vanilla 3 tbsp maple syrup (or more) (Serves 4) Instructions: 1 Melt dark chocolate using a double boiler or (Thermomix: 3-5 minutes, 50 degrees, speed 1). 2. In a blender, combine melted chocolate with silken tofu, 1/2 tsp vanilla, and 3 tablespoons maple syrup. Blend on high for 3 minutes (Thermomix: 3 minutes, starting from speed 3 and gradually increasing to 9). 3. Transfer the mixture to a bowl and refrigerate for at least 4 hours, preferably overnight. For the Chickpea ‘tuna’, mash -1 can chickpeas, drained & rinsed And mix with: -1 tbsp mayo -2 tbsp soy sauce -1 tbsp rice vinegar -2 tbsp nori flakes -1 tsp white pepper -2 tbsp nutritional yeast Pick up one handful of rice, place the chickpea mix in the middle, add more rice and close it up. Squeeze the rice to a triangular shape. You can either eat it like that or panfry. I panfried them until golden brown and brushed some soy sauce mixed with a bit of sugar. To add the nori sheet, place a slice of nori on the bottom of the onigiri, then fold it up to the middle. • By @dr.vegan

Vegan Spinach & Feta Empanadas By Dr.vegan Ingredients 3 cups all-purpose flour (360g) 1 tsp salt 1 cup warm water (add more if needed) (240ml) 2-3 tbsp vegetable oil For the Filling: 200 g vegan feta cheese, crumbled (7oz) 2 cups fresh spinach, finely chopped (60g) Fresh herbs optional, finely chopped Instructions Prepare the Dough
In a large bowl Combine 3 cups (360g) of all-purpose flour with 1 tsp of salt. Gradually add 1 cup (240ml) of warm water while stirring. If the dough feels too dry, add a little more water, one tablespoon at a time, until the dough comes together. Once combined, add 2-3 tbsp of vegetable oil and knead the dough until smooth and elastic, about 5-7 minutes. Cover the dough and let it rest for 20-30 minutes. Prepare the Filling

Ingredients: 12 oz extra-firm tofu 1 nori sheet 1 cup arrowroot powder 3 garlic cloves 1 tbsp gochujang 1 tbsp coconut amino 1/2 tbsp soy sauce 1/4 cup water High smoke point cooking oil Instructions: Prepare tofu: Cut tofu into thin strips. Make nori sheets: Cut nori sheets into squares. Bread tofu: Coat tofu strips in arrowroot powder, then dip in water. Wrap each strip in a nori square. Fry: Heat oil in a pan. Fry tofu until golden brown. Make sauce: Blend garlic, gochujang, coconut amino, soy sauce, and water until smooth. Serve: Enjoy crispy tofu with the sweet & spicy gochujang sauce

(serves 2) grill cherry vine tomatoes with a drizzle of olive oil, salt, pepper & crushed garlic for 10-15 minutes at 180°c. blend: 1 x 450g block firm tofu 200ml plant milk 50g raw cashews juice of 1 lemon 2 tbsp nutritional yeast pinch salt good drizzle olive oil Serve the roasted tomatoes on a bed of the blended tofu mixture, top with fresh basil, cashew parm, balsamic vinegar and enjoy with some warm crusty bread.
