spice mix:
1tsp ground ginger 
1tsp chilli flakes
1tsp paprika
1tsp cumin 
1 heaped tbsp hot curry powder 

4 cloves of garlic 
2 large vine tomatoes 
2x tins green lentils
2x coconut milk 
Olive oil
salt & pepper 
(Optional) corriandor, coconut yoghurt and naan bread to serve 🤎

fry your spice mix with no oil for 30 - 60 seconds then add the garlic, olive oil and tomatoes and simmer for 5 minutes. then add the lentils and coconut milk and let it simmer for about an hour…. stir it every once in a while so it doesn’t stick to the bottom of the pan. season with salt and pepper to taste and serve up with coriander, coconut yoghurt and a carb of your choice 🤎 enjoy
