2 cups of dried black eyed peas - soaked overnight and cooked until tender
3/4-1 cup palm oil - more or less to taste
1 medium - large white or Spanish onion, thinly sliced
1-2 scotch bonnet or habanero, finely diced
4-5 tomatoes diced
1-2 teaspoons of salt (or to taste)
2 teaspoons garlic powder
2 teaspoons paprika
Water as needed

To serve
White rice, boiled ripe or unripe plantain, fried plantain
