I make it for Shabbos very often and love that it’s so filling and versatile! I add in some edamame, tofu or roasted salmon for a complete meal. 1 package rice noodles, cooked to package directions 1/2 cup shredded purple cabbage 1/2 cup mango, diced 1/4 cup chopped cilantro 1/4 cup chopped scallions 2-3 Persian cucumbers, diced 1 avocado, diced 1/2 cup chopped peanuts or cashews 2 tablespoons sesame seeds Dressing: 1/2 cup peanut butter 1/4 cup hot water 1/4 cup rice vinegar 3 tablespoons honey 1 tablespoon mirin 2 tablespoons soy sauce 1 clove garlic, grated Juice of 1 lime 1/2 teaspoon salt 2 teaspoon sesame

Yes, it involves blanching Brussels sprout leaves which is an extra step, but it's not hard and you can do it the day before. Just make sure you shock the blanched leaves in ice water and spin them dry really well. I have also swapped cheese for the avocado and it's delicious too.
