Roasting the shrimp instead of sautéing it cuts down on the time needed to make it and produces an absolutely delicious dish. . . Roasted Shrimp Scampi . . 2 lb shrimp, peeled and deveined (These shrimp are U-15, but I’ve often used smaller sized with great results) 1/4 cup olive oil 4 tbls melted butter 5 cloves chopped garlic 1 tsp chili flakes 1/3 cup white wine (I used Chardonnay because that’s what I tend to have in the House) 1 tsp salt 1/2 tsp pepper Juice and zest of one large lemon 1/2 cup chopped parsley 1/4 cup chopped basil 1/2 cup grated Parmesan Preheat oven to 400F. Add oil to a pan on medium heat. 2. Season the shrimp with salt and black pepper. Make sure to get both sides. 3. When the oil is hot, carefully add the shrimp. Cook each side for 2 minutes. When they’re done remove and reserve. 4. Discard any excess oil. Turn the heat down to medium low.

It’s a great entertaining dish because it can be completely set up in advance and parked in the fridge until you are ready to bake it off . . .
