We're going to start off by buttering our mold and then we're going to add our Funfetti sprinkles. You want to turn that around to get the mold nice and coated in the sprinkles. Here, I'm using a little bit of buttercream in the bottom of my pan. This is going to help the sprinkles adhere to our cake. You want to press that in so everything sticks well. Now, I'm adding some vanilla ice cream but you can use your favorite flavor. Cake and ice cream is the perfect bear. Add a little bit more buttercream for our cake. We're going to place cake bottom in. Press that down really well because you want to sandwich in that ice cream. We're going to place it into the freezer until nice and solid and now it's time to serve. Look at that ratio. Perfect cake to ice cream ratio.

While I’m not a lemon junky, I have grown very found of this cake this year, my children were so excited when I pulled it out of the oven. It is worth every bite. It’s suggested to be served with ice cream but it’s perfect with a side of sugared cranberries this time of year. 3 cups cake flour 1 Tbsp baking powder ¾ tsp salt 3 cups sugar 1 cup unsalted butter, room temp ½ cup shortening, room temp 5 large eggs 1 cup whole milk 6 Tbsp lemon juice 1 lemon, zested - Preheat oven to 350ºF. Spray or butter and flour (not sugar) a 15-cup Bundt pan. Sift flour, baking powder and salt into medium bowl. Set aside. - Using a mixer beat butter, shortening and sugar. Add eggs one at a time. Add dry ingredients alternately with milk on low speed just until blended after each addition. Mix in lemon juice and zest. - Bake cake until tester inserted into center comes out clean, about 55 minutes. Cool before taking out of pan. *Recipe was adapted from the recipe shared by The Plain Chicken blog. | Hillary \\ Tello and Rose
