Amaranth leaves and stems are good economic sources of carotenoids, proteins, including the essential amino acids methionine and lysine, dietary fiber and minerals, such as magnesium, calcium, potassium, copper, phosphorus, zinc, iron, and manganese. Amaranth looks somewhat like spinach and is found mainly in the foothills of the Himalayas and the coasts of South India. They come in various colours ranging from gold, red, green to purple.
