Moo Goo Gai Pan is a Cantonese dish and translates directly to “mushrooms and sliced chicken." I remember this classic healthy Chinese dish from my first job in a Chinese restaurant in upstate New York where this Moo Goo Gai Pan were served amongst a host of Americanized Chinese dishes.

• 340 g 12 ounces chicken breast
Produce
• 8 oz Bamboo shoots, canned
• 4 cups Bok choy
• 2 cloves Garlic
• 6 thin slices Ginger, fresh
• 2 Scallions
• 8 oz Straw mushrooms, canned
• 1/2 cup White or cremini mushrooms
Canned Goods
• 1 cup Chicken stock
• 8 oz Water chestnuts, canned
Condiments
• 1 tsp Oyster sauce
Baking & Spices
• 6 1/2 tsp Cornstarch
• 1 Salt and white pepper
• 1/4 tsp Sugar
Oils & Vinegars
• 1 tsp Canola oil
• 1/2 tsp Sesame oil
Beer, Wine & Liquor
• 1 tbsp Shaoxing wine

• 3 tbsp Water
