642K views · 31K reactions | @shredhappens - WARM MEDITERRANEAN SALAD Things are getting a bit chilly, so its time to put a warm spin on my favorite kind of food: healthy salads. This is going to make you love eating your veggies. And the good news is, if you’re super lowcarb, you can use your favorite kind of squash, and if you aren’t watching carbs too closely, this would be amazing with sweet potatoes, too. Serve this up as an appetizer, as a warm salad of sorts, or even as your main. Here is how I made it: 1. Peel 6-8 medium carrots. Cut them into thirds, then cut again in half. Toss into a bowl. 2.Drizzle carrots with 2-3 tbsp olive oil and season with a couple generous pinches salt, pepper, 1 tbsp paprika, 1 tbsp garlic powder, 1 tbsp oregano, and 1 tsp cumin. Mix well. 3.Lay out your carrots on a baking tray or dish and make sure they are not overly crowded. Optional: drizzle with a little more olive oil. 4.Roast in the oven at 400F for 38-40 mins. Time may vary by oven, so keep an eye. Flip at the end so it roasts on the opposite side for 5 mins. 5.Make your yogurt feta sauce by mixing 1 cup thick plain yogurt, 1.5 to 2 ounces crumbled feta, 1 tbsp olive oil, 1 tsp Aleppo pepper, and salt. Mix, taste, and adjust. 6.Spread the sauce on the bottom of a plate. Top with roasted carrots, 1/2 cubed avocado, a handful of finely chopped pistachios, 2 tbsp fresh finely chopped parsley, 1 tbsp fresh finely chopped mint, some Aleppo pepper flakes, then squeeze some lime juice. Between holiday parties and festivities, I’m trying to be intentional about fueling my body with nutrient-rich foods because tbh it helps me feel better. And when I feel better, I show up better for my loved ones. And that’s important to me, especially this time of year! ❤️ if you’re like me and wanna fuel your body (and mind!) with an easy healthy lunch, you gotta try this chickpea salad!   Full recipe below.👇🏼 To get it right comment RECIPE and I’ll send you the link! 🙂   Ingredients •1 can chickpeas (garbanzo beans), 15 oz rinsed and drained •1 cup cherry tomatoes, halved or quartered about 15 tomatoes •4 persian cucumbers, diced or an english cucumber •2 Tbsp fresh dill, chopped •¼ cup fresh parsley, chopped •½ cup crumbled feta cheese 4 oz or half a block   For Dressing •1 tablespoon extra virgin olive oil •2 tablespoon white wine vinegar •juice of 1 lemon, about 2-3 tablespoon lemon juice •½ teaspoon garlic powder •½ teaspoon salt, more to taste •dash black pepper    Directions •Drain and rinse a can of chickpeas. In a medium bowl, combine the salad ingredients including cucumbers, tomatoes, red onion, fresh herbs and chickpeas.
•Top the salad ingredients with the dressing ingredients. Toss until everything is coated.
•Add crumbled feta on top and gently toss again.
 Dietitian tip 👉🏼Chickpeas (garbanzo beans) are the main ingredient in this recipe. They provide dietary fiber for gut health and 12g of plant-based protein per cup! And chickpeas are also high in vitamins B6 and B12 which have been shown to support brain health. 🧠 So do yourself (and your brain) a favor and make an awesome chickpea salad. Recipe below👇🏼 or comment RECIPE and I’ll send it to you! 🔗❤️ INGREDIENTS • 2 cups shredded chicken (I use store-bought rotisserie chicken) • 1 cup spinach, finely chopped • ½ cup Greek yogurt • ½ cup cottage cheese • ¼ a large apple, chopped (about ¼ cup) • ¼ a red onion, chopped (about ¼ cup) • ¼ cup dried cranberries, roughly chopped • 2 tablespoon pecans, chopped • 1 tablespoon extra virgin olive oil • 2-3 tablespoon fresh lemon juice (1 large lemon) • ½ teaspoon garlic powder • ¼ teaspoon salt (more to taste) • ¼ teaspoon black pepper more to taste DIRECTIONS 1.  Finely chop the spinach, shred the chicken, and chop the cranberries, apple, pecans, and red onion.  2. Add all the ingredients to a large bowl and mix it well so that everything is coated. Give it a taste and add more salt as needed. STORAGE Refrigerator - store leftover Chicken Salad in an airtight container in the fridge for up to 3-4 days. Dietitian Tip 👉🏼A traditional chicken salad recipe is made with mayo or sour cream. I love replacing it with cottage cheese and Greek yogurt to make a “no mayo chicken salad” with a creamy dressing that is higher in protein and lower in saturated fats. It works great as a healthy holiday appetizer - just serve with a side of veggies or crackers!
