No reservation required for this Veal Chop Milanese Easter feast for two! Serves: 2 Prep time: 8 minutes Cook time: 9 minutes Special tools: 14-inch pan, plastic wrap Ingredients: 1 18 oz bone-in veal chop, 2 inches thick (@Canadian Beef / @Ontario Veal Appeal) 1 cup flour 2 eggs, beaten with a splash of milk 1 cup breadcrumbs 1 tsp oregano 3 tbsp pecorino, grated 3 tbsp EVOO 1.5 tbsp butter 1 tsp kosher salt 1 tsp black pepper 1 tsp flakey salt Method: 1. Season the breadcrumbs with salt, pepper, oregano and pecorino. 2. Lay the veal chop on a sheet of plastic wrap; drizzle with olive oil. Top with second sheet of plastic wrap. Bang it out with a meat mallet or rolling pin to a 1/4 of an inch. 3. Dredge in flour, then egg wash and finally the breadcrumb mixture. Let sit for a minimum of 3 minutes. 4. Bring your pan with oil up to medium heat and add your butter. 5. When foaming, add your breaded veal. 6. Cook on the first side until golden, about 3- 4 minutes then flip. 7. Baste with the hot oil and butter until both sides are crispy and golden, about 4-6 minutes. 8. Remove and let rest while seasoning with flaky salt. 9. Serve with your favourite salad and a lemon squeeze. . . .
