234 reactions · 11 shares | Eid is fast approaching… yes, another one 😅. This one’s called Eid al-Adha — and whether you’re cooking up a storm, planning something low-key, or just showing up for dessert, here’s one that’ll win hearts 💚 I made this today — a pistachio & cranberry crumble with ashta — and it’s one of those quick and easy recipes that feels like you did something fancy, but really… you didn’t 😂 Creamy, nutty, soft, and so satisfying to scoop straight from the fridge. So here’s what I did: I coarsely chopped pistachios and cranberries, added sugar, melted butter, and orange blossom 🌸 Then I scattered three-quarters of that mix into the base of a glass bowl. The ashta? I cooked milk, thickened cream, flour, cornflour, and sugar until thick, then stirred in orange blossom at the end. Once it cooled in the fridge, I gave it a quick whisk and spooned it gently over the crumble. Finished it off with the rest of the pistachio mix on top. That’s it — no oven, no layering stress, just scoop-and-serve goodness. Things I thought while cooking this… – Quick and easy… I know you guys will love this 😍 – Roubz reminder: don’t press the pistachio layer down — it’s a crumble, not a base! – I used orange blossom because it just works with pistachio, but you can totally use vanilla or rosewater if that’s more your vibe – Honestly thought I’d have leftovers — I was wrong 😂 PS. I used a 26cm glass bowl. No baking. Just chill and serve. Keeps well in the fridge — if it lasts 😅 Ingredients: Pistachio Crumble: 300g pistachio kernels, coarsely chopped ¾ cup dried cranberries, coarsely chopped 3 tbsp sugar 30g unsalted butter, melted 2 tsp orange blossom water Ashta Cream: 2 cups (500ml) full cream milk 500ml thickened cream 4 tbsp plain flour 4 tbsp cornflour 5–6 tbsp sugar (to taste) 1–2 tbsp orange blossom water #dessert #pistachio #eid #easyrecipes | Rouba Shahin | Facebook

Preheat your oven to 180°C (350°F). 2. Cut the yufka/filo pastry into long strips. 3. Place half of the strips on a baking tray. 4. Add your chosen filling — cheese, herbs, or anything you like. You can create more layers if desired. 5. Cover with the remaining yufka strips. You can make even more layers if you like. 2/3 works beautifully. 6. In a bowl, whisk together the milk, eggs, and melted butter (or olive oil). Pour the mixture evenly over the pastry. If you make more of this mix you will get a su böreği texture. 7. Bake until golden and crispy, about 20–25 minutes.
