You’ll only need- •1/4-cup extra virgin olive oil •1/2-cup onion chopped •4-6 garlic cloves, sliced up decide •2-10 oz cans of cannellini beans rinsed •1-qt chicken broth/stock low sodium •1-head escarole washed and chopped •1/4-cup grated Romano cheese •1/2-tsp black cracked pepper •1-cup of water 1-add the olive oil, onions, garlic, to a pot and put the heat to low to allow the garlic and onion to slowly infuse the oil. Until the garlic begins to turn light golden 2-add the broth, water, pepper, beans and bring this to a boil. Historically it’s been called a ‘poor man’s soup’ because it used up leftover ingredients from other meals. That’s why to this day, there’s no one exact recipe for how this soup should be made, because it was made with whatever people had. It’s totally versatile because you can switch up the beans, the pasta, the greens and the veggies. Potatoes, cabbage, mushrooms and eggplant are possible add-ins. Homemade Chicken Noodle Soup: 👇🏻 Ingredients: ▪️2-3 TBS.
