All you need is whole milk, lemon juice and salt. You can totally make this way more decadent with half milk and half cream but I hoard our cream for butter. Ok here we go: Pour the milk into a heavy bottom sauce pan or pot and heat till just before boiling. Your great grandmother did not use a thermometer to heat milk to the perfect temp… you don’t need to either. Just keep an eye on it and right before it gets to boil, add the lemon juice. Give it a stir and then take the pot off the heat. Let it sit for 5 minutes and give the milk a chance to coagulate and sepa
